Pesto Melt: Our Favorite Go-To Meal

This recipe comes from the Great Taste No Pain recipe book where it is called a Pan Banget.  We've altered the ingredients a little, and the pesto is the star, so we've taken to calling it a Pesto Melt.  And it seriously gets eaten at least once a week at our house.  Its super fast and we usually only have to pick up a $1.00 french bread loaf on the way home from work cuz we have all the other ingredients.  This is something you should totally try making.  Maybe you'll fall in love with it, just like we have. 


Ingredients: 
  • 1 French bread loaf
  • 1 Large tomato
  • 1 cucumber 
  • 1 small can of sliced olives 
  • Marinated artichoke hearts, quartered (we use Costco brand usually)
  • 1/4 cup olive oil
  • 3 cloves of garlic, minced and added to the oil
  • fresh frozen basil pesto (Chris' mom makes and freezes the pesto we use.  I might have to get her recipe and share it too.  Its amazing.) 
  • Sliced Provolone cheese

 
 
 
Yeah, you're gonna want to try this!!
